Boursin Cheese Pasta

- 12 ounces medium pasta any shape
- 5.2 ounces Boursin cheese herb and garlic flavor
- ½ cup chicken broth
- ¼ cup heavy cream
- 1 cup frozen peas thawed*
- 2 roma tomatoes diced
- fresh basil and parmesan cheese for garnish, optional
Instructions
- Bring a large pot of salted water to a boil, add pasta and cook al dente (firm). Reserve ½ cup pasta water, drain the remaining water and set pasta aside in a bowl. Do not rinse pasta.
- In the same pot, melt Boursin cheese over medium heat. Add chicken broth and milk, whisk together and simmer 2-3 minutes.
- Add peas, tomatoes, 2 tablespoons pasta water, and hot pasta. Simmer 1 minute more. Add more pasta water if sauce becomes too thick.
- Garnish with parmesan cheese and fresh basil if desired.
