What Should the Internal Temperature of Chicken Be?
Chicken should always be cooked to an internal temperature of 165°F. Bone-in chicken takes longer than boneless, so double-check the temperature using a meat thermometer.
When checking the temperature of boneless chicken breasts, insert the meat thermometer into the thickest part of the chicken, as this area takes the longest to cook through.
When checking the temperature of bone-in chicken, make sure you don’t hit the bone with the thermometer, or the temperature will read incorrectly.
To check the temperature of a whole chicken, stick the temperature between the breast and thigh, as this area takes the longest to cook fully.
Before slicing into chicken after cooking, allow it to rest for at least 5 minutes. This lets the juices soak back into the meat, so it doesn’t dry out.
