- Macaroni and Cheese: Refrigerated mac and cheese provides cooked pasta and creamy sauce in one convenient shortcut. Use it cold or slightly chilled to make the mixture easier to portion into the muffin pan.
- Mozzarella Cheese: Adds classic pizza flavor and extra cheesiness while helping bind the bites together. Pre-shredded mozzarella works well, though freshly shredded cheese melts more smoothly.
- Breadcrumbs: Adds structure and helps the bites hold their shape. Use plain or Italian-seasoned breadcrumbs depending on your preferred flavor.
- Dried Oregano and Basil: Add classic Italian pizza-seasoning flavor to the bites. Keep it simple, and swap both herbs for an Italian seasoning blend.
How to Make Mac and Cheese Pizza Bites


- Mix the macaroni and cheese with mozzarella, eggs, flour, breadcrumbs, and seasonings.
- Fold in the pizza toppings (full recipe below).
- Spoon the mixture into a greased muffin pan, top with Parmesan, then bake.
Let the mac and cheese bites rest in the pan for 5 minutes before removing from the pan to keep them from breaking apart.

Storing Leftovers
- Keep leftovers in an airtight container in the refrigerator for up to 4 days and in the freezer for up to 2 months.
- Reheat on a baking sheet and heat at 350°F until warmed through, or in a 325°F air fryer in a single layer until hot.

Pizza Mac and Cheese Bites

Ingredients
- 1 package Bob Evans Macaroni and Cheese
- 1 cup shredded mozzarella cheese
- 2 eggs beaten
- ⅓ cup all-purpose flour
- ⅓ cup bread crumbs
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- 2 tablespoons diced green bell pepper
- 2 tablespoons diced black olives
- ⅓ cup pepperoni chopped
- ¼ cup grated Parmesan cheese
- pizza sauce for serving
Instructions
- Preheat oven to 375°F.
- Combine macaroni and cheese, mozzarella, eggs, flour, bread crumbs, basil and oregano. Mix until combined.
- Gently fold in bell pepper, pepperoni, and olives.
- Spoon into greased mini muffin tins and sprinkle Parmesan cheese over top.
- Bake for 18 to 20 minutes, or until heated through. Serve warm with pizza sauce.

When I make Mac and cheese, I use cornstarch instead of flour. One cup milk, two tablespoons butter and 2 tablespoons cornstarch, as much cheese as you like, a teaspoon of dry mustard powder and 1/2 teaspoon smoked paprika makes a sauce that is never floury!
