Homemade Banana Bread Granola
- 3 cups old-fashioned rolled oats
- ½ cup golden flaxseed meal
- 1 cup pecans
- 2 teaspoons cinnamon
- ¾ teaspoon salt
- 8 tablespoons maple syrup
- 8 tablespoons unsalted butter melted
- 1 tablespoon vanilla
- 1 large egg white beaten
- 2 cups banana chips
- Preheat the oven to 350˚F.
- Add the oats, flaxseed meal, pecans, cinnamon, and salt to a large bowl.
- Whisk together the maple syrup, butter, and vanilla.
- Pour the butter mixture onto the dry mixture and stir well. Add beaten egg white and mix.
- Spread onto a rimmed baking tray and bake for 15 minutes, tossing halfway through.
- Stir in banana chips and bake until the oats are golden, about 15 minutes.
- Cool to room temperature. Add to zippered bags or sealed containers and store at room temperature for about a month.
