Grinder Salad

  • 1 (8 ounce) bag shredded iceberg lettuce or romaine
  • cups chopped deli meat salami, ham, turkey, pepperoni, or an Italian deli mix
  • 1 cup shredded Italian cheese blend or cheddar
  • 1 cup croutons
  • 1 cup cherry tomatoes sliced
  • ½ cup sliced red onion
  • ½ cup sliced pepperoncini or banana peppers

Dressing

  • cup mayonnaise
  • ¼ cup bottled Italian dressing

Instructions 

  • Whisk the mayonnaise and Italian dressing together in a large salad bowl.
  • Add the lettuce, chopped deli meat, shredded cheese, croutons, cherry tomatoes, red onion, and banana peppers.
  • Toss until everything is coated. Serve immediately so the lettuce stays crisp.

Notes

To make dressing from scratch, whisk together ½ cup mayonnaise, 3 tablespoons red wine vinegar, 1 teaspoon Italian seasoning, ½ teaspoon garlic powder, 2 tablespoons Parmesan cheese, and pepper to taste.
Use a chopper to cut your meat and veggies quickly. If your meat is a little too soft for the chopper, freeze it for 5-10 minutes first.
If you don’t plan on eating the salad immediately, keep the dressing on the side until ready to serve.
