The ‘Burger’ Essentials

  • Lean Ground Beef: Using lean ground beef keeps the pie from getting greasy. If using higher-fat meat, drain it thoroughly before adding it to the pan. Swap it for ground chicken or ground turkey with good results.
  • Bisquick: This Bisquick base makes a quick topping. Use store-bought or make your own.
  • Sharp Cheddar Cheese: Freshly shredded cheese melts best, but pre-shredded works for a shortcut. Try Monterey Jack, Colby Jack, or Pepper Jack for a twist.
  • Variations: Make it a bacon cheeseburger by adding ½ cup of bacon bits or stir in diced tomatoes for a veggie-loaded version.

Tips For The Best Cheeseburger Pie

  • Drain Well: To avoid a soggy bottom, make sure the beef and onions are completely drained of fat and moisture before putting them in the pie plate.
  • Whisk Thoroughly: This removes lumps from the Bisquick mixture so the topping bakes up evenly and fluffy.
  • The Knife Test: Just like a cake, insert a knife in the center. If it comes out wet, cook it for a few more minutes until set.
  • Make it Mini: You can bake these in a muffin pan for “cheeseburger cupcakes,” making them perfect for appetizers.
  • Room Temp Eggs: Use room temperature eggs for a smoother batter that incorporates better with the milk.
  • Let it Rest: Allow the pie to sit for 5 minutes after taking it out of the oven, this helps the slices stay intact when serving.

Storing and Reheating Leftovers

Keep leftovers in an airtight container in the refrigerator for up to 4 days.

Freeze leftovers by wrapping them in plastic wrap, then foil, and freezing for up to 2 months. Thaw in the refrigerator before reheating.

Reheating the oven or air fryer at 350°F until warmed through. The microwave works for speed, but it may soften the Bisquick topping.
