Bacon Cheddar Pasta salad!

I was wandering my local Safeway looking for an inspiration for dinner. Do you ever sometimes feel like you’re always having the same meals over and over? While I was near the meat section in my store I saw the freezer case where chicken products are stored, I was peeking around to see what I could find that would be new and different for dinner, and I found this!
Barber Foods breaded stuffed chicken breasts! Now, I’ve had these once or twice back in the day but they appear to have new packaging and it says a new recipe so I thought I would give it a try!! These seemed like the perfect dinner idea for a busy weeknight, so I grabbed up a few boxes and then headed home to cook dinner for the fam! I came up with an easy and delicious side dish I thought you all might love! It’s a bacon cheddar pasta salad and it’s not only easy but it was so good! My husband spent the next two days texting me about how much he loved dinner, wasn’t that sweet?! Even my kids really loved it!
Since he loved the meal so much I wanted to share it with you! Of course we had the Barber Chicken Cordon Bleu (the new recipe is so delicious and moist, it’s even better than I had remembered it to be!), we also had a spinach salad, and of course my newest dish, the bacon cheddar pasta! Now, when cooking chicken, regardless of if it comes fresh or frozen, please always be sure to cook it to an internal temperature of 165 degrees to ensure it is safe for you and your family to eat. I always keep a meat thermometer handy to check!
The most important part about dinner is the family all being together. These days it seems our schedules are all so crazy that it’s hard to find a meal that isn’t your every day mundane meal and can be on the table in time for the whole family to be together. Having the Barber Chicken as the star of the meal was one of the best ideas I’ve had in a while! I didn’t have to spend all my free time cooking, which meant I had more time to sit down and enjoy dinner with my family. It really made my night special to have more time with my kids, and it meant so much to me that my hubby loved the food as much as he did!
Here’s the recipe for the Bacon Cheddar Pasta Salad:
A creamy pasta dish with bacon and cheddar
- 12 oz rotini pasta cooked and drained
- 1 lb bacon cooked and crumbled
- 8 oz cheddar cheese shredded
- 1 cup frozen peas thawed
- 1 1/2 cups mayo
- 1 cup milk
- 1 package ranch dressing mix
- Place drained pasta into a large bowl and set aside.
- In a small bowl, mix together milk, mayo, and ranch packet.
- Once ranch mixture is blended well, stir into pasta.
- Add remaining ingredients and mix well.
- This can be served right away but in my opinion is best if served chilled.
