Shredded rotisserie chicken is simmered in salsa and taco seasoning, then scooped into warmed tortillas with your choice of toppings for a zesty meal with fiesta flair.

Holly’s Recipe Highlights
- Flavor: Juicy, savory, and full of smoky roasted flavor, all tucked into a warm tortilla with your favorite toppings.
- Skill Level: 5 ingredients and a skillet are all you need!
- Freezing: The seasoned chicken can be stored in the freezer for up to 3 months.
Taco Ingredient Lineup
- Chicken: Rotisserie chickens come pre-cooked and pre-seasoned, so they’re instantly juicy and delicious. Any leftover chicken or turkey works. For the best results, shred or finely chop leftover chicken or turkey.
- Seasonings: Choose your favorite mild, medium, or hot jar of salsa and taco seasoning. Buy it or DIY it! Make this simple taco blend with pantry basics and have extra on hand for taco mac and cheese or as a zesty rub for oven-baked ribs.
- Tortillas: Smaller tortillas (AKA street) are great for a handheld, but any size works. Use low-carb tortillas for a keto-friendly recipe.
Time-Saving Taco Tricks
- Shred the chicken while it’s warm; it pulls apart easier.
- Mix in black beans or corn to stretch the meal.
- Save time with a rotisserie chicken and jarred salsa. The filling can be prepped up to 2 days ahead and chilled, then just heat it when you’re ready to serve.
- Wrap a stack of tortillas in foil and keep them warm in the oven.
Serve it and Save it
- Top your tacos with tomatoes, lettuce, sour cream, salsa, jalapenos, and lots of shredded cheese.
- Store the leftover rotisserie chicken taco filling in a covered container for up to 4 days.
- Enjoy it cold on a salad or reheat portions in the microwave or on the stovetop. Leftovers can also be made into cheesy chicken enchiladas or chicken taquitos.
