This no bake dessert recipe is super easy to make with minimal prep! It’s perfect for kids or even the most novice bakers to try!

Jello – Strawberry, raspberry, cherry, lemon, or lime Jello are all delish options for cheesecake bars so you can create a new recipe every time!

Cheesecake – DIY cheesecake is so easy to make with cream cheese, powdered sugar, and whipped topping! No need to buy Philadelphia brand if the store brand is more affordable!

Crust – Short on time? Use store bought graham cracker crumbs or a graham cracker pie crust. Nilla wafers, Oreos, and gingersnap cookies also make great crusts for cheesecake bars!

Variations – Swirl in some strawberry jam over the top of the cheesecake before adding the Jello or add a layer of sliced strawberries. A squirt of chocolate syrup can be added to the cheesecake mixture for a decadent chocolate cheesecake!

How to Make No Bake Strawberry Cheesecake Bars

  1. Dissolve Jello in boiling water and set aside to cool.
  2. Combine the crust ingredients (per recipe below) and press into the bottom of a baking dish.
  3. Whip cream cheese until fluffy. Stir in powdered sugar, whipped topping, lemon juice, and vanilla extract.
  4. Spread cheesecake filling on the crust and refrigerate.
  5. Pour cooled Jello over the cheesecake and refrigerate until firm.

Tips for Success!

  • Start with softened cream cheese for faster blending!
  • Allow the Jell-O to cool down to room temperature before topping the cheesecake mixture.
  • Spread the cream cheese layer all the way to the edge to prevent the graham cracker crust from becoming soggy when the Jello is poured over.

No Bake Strawberry Cheesecake Bars

These creamy and fruity cheesecake bars are so easy, and need just 15 minutes to assemble!

Ingredients  

  • 6 ounces strawberry Jell-O
  • 2 cups boiling water
  • 18 graham cracker sheets or 2 cups of graham cracker crumbs
  • ½ cup butter melted
  • 3 tablespoons white sugar
  • 24 ounces cream cheese room temperature (3 packages)
  • 1 cup powdered sugar
  • 16 ounces frozen whipped topping thawed container
  • 1 tablespoon lemon juice
  • 2 teaspoons vanilla extract

Instructions 

  • In a larger mixing bowl combine Jell-O and boiling water, stirring until Jell-O is dissolved. Allow to sit at room temperature until completely cooled.
  • In a food processor, blend graham crackers into crumbs. Blend in melted butter and sugar.
  • Press graham cracker mixture evenly into the base of a 9×13 baking dish to form the crust.
  • In a large mixing bowl, blend cream cheese until light and fluffy. Stir in powdered sugar, whipped topping, lemon juice and vanilla, mixing well.
  • Spread mixture over graham cracker crust, ensuring the cream cheese filling is level and spread right to the edges of the pan. Cover and refrigerate until Jell-O is completely cooled.
  • Pour cooled Jell-O overtop of cheesecake mixture.
  • Refrigerate until firmly set, at least 4-6 hours or overnight.
