Cereal, marshmallows, butter, vanilla, and a few minutes of cooking time make microwave Rice Krispie squares the perfect treat for summer.
Microwave Rice Krispie Treats
- Easy microwave rice krispie treats have fewer steps and zero stovetop time so they’re perfect for older kids just learning their way around the kitchen.
- These treats are chewy and sweet.
- Rice Krispie treats travel well for a mess-free snack on road trips and picnics for kids and grown-ups alike.
Ingredients
Rice Krispies: No need to buy the name brand here, any rice cereal works. Add some Lucky Charms and celebrate St. Patrick’s Day, or Butterfinger Bars for an especially gooey treat.
Marshmallows: Mini marshmallows will melt faster than large ones, but you can cut the large ones into fourths for better results.
Variations
- The sky is the limit on add-ins or toppings on Rice Krispie squares. Mix in mini M&M’s, red hots, mini chocolate, or peanut butter chips, or for extra crunch, some homemade granola.
- Top Rice Krispie cake with colorful birthday sprinkles, or add a drop of food coloring to the marshmallows in Step 3: red for Valentine’s Day, green for St. Patrick’s Day, or orange for Halloween, or use Christmas molds for festive goodies.
How to Make Microwave Rice Krispie Treats
- Melt butter and marshmallows in a greased bowl. Add vanilla.
- Stir in cereal until well coated.
- Spread into prepared pan (recipe below).
- Cool completely before cutting.
Tips for Success
- The best Rice Krispies treats start with the freshest ingredients. Avoid stale cereal and hard marshmallows, both will be hard to blend and the results won’t have that classic crispy texture and light, sweet flavor. Butter is preferable to other spreads because it has the best flavor and performs better than butter substitutes.
- This recipe comes together fast so have your pan, bowl, and spatula greased and ready to go! Be sure to cook in intervals to avoid overcooking the marshmallows, otherwise, they’ll harden and it will make adding the cereal difficult.
- Gently press the mixture in using wet fingers so it doesn’t stick to your hands.
- Let the Rice Krispie cake cool completely before cutting so your squares are sharp and uniform-looking. Instead of a sharp knife, a metal bench scraper (the kind used to scrape bread dough) is perfect for cutting straight up and down resulting in perfectly cut squares.
Storage Suggestions
Wrap squares individually for make-and-take snacks to share.
Keep leftover microwave Rice Krispie treats in a covered container at room temperature for up to one week.
