Ingredients & Variations
Meat – This is a great way to use up leftover ground beef, shredded turkey, or chicken. If making the meat sauce from scratch, add some ground sausage to make it extra juicy. Sliced summer sausage, diced ham, or bacon crumbles are great switches for the ground beef if time is short.
Cabbage – Green, red, or a bag of shredded coleslaw mix works in this recipe.
Rice – Instant white or brown rice cooks fast and soaks up all that delicious tomato sauce. Leftover rice is a budget-friendly way to use up leftovers!
Sauce – Choose your favorite marinara sauce, pizza sauce, or even a can of condensed tomato soup.
Variations – It’s easy to sneak in some extra veggies like a bag of peas and carrots or some water chestnuts for a little crunch. Omit the meat altogether and make a vegetarian version using a can of drained and rinsed black beans. Spread a cup of cheddar, Monterey Jack, or Swiss cheese over the finished casserole and broil until the cheese is browned and bubbly, if you like.
