Just 5 Ingredients

Chicken: I love using chicken breasts in this recipe. Chicken thighs, drumsticks, or frozen chicken strips would all taste great, too.

Potatoes: I prefer using red or yellow potatoes, but any will work and there’s no need to peel them!

Seasonings: Garlic butter and BBQ sauce add savory and summertime flavor to chicken foil packets. Use pre-minced garlic from a jar or buy ready-made garlic butter if time is short!

  • Add slices of corn on the cob, chunks of zucchini or squash, mushrooms, or halved Brussels sprouts. Divide a bag of frozen vegetable medley veggies into each packet for extra flavor, color, and nutrition.
  • Leftover rice or pasta will soak up all those buttery flavors and stretch the dish even further.
  • Sprinkle on some parmesan cheese before wrapping them up for extra tangy flavor.

How to Make Chicken Foil Packets

  1. Add sliced potatoes to foil. Season.
  2. Place a chicken breast brushed with BBQ sauce on top of the potatoes.
  3. Seal the foil packets tightly and cook (per recipe below).
  4. Let packets rest before serving.

Quick Tips

  • Make sure potatoes are cut evenly so they cook at the same rate. If chicken breasts are extra thick, pound them until they are even, or cut them into strips.
  • Lots of pan-release will ensure your meat and veggies don’t stick to the foil.
  • Be careful of the steam that escapes when unfolding the foil packets.

Keep leftover chicken foil packets in the refrigerator for up to four days. Reheat on the grill or slice chicken and add it to a salad.
