Chicken: I love using chicken breasts in this recipe. Chicken thighs, drumsticks, or frozen chicken strips would all taste great, too.
Potatoes: I prefer using red or yellow potatoes, but any will work and there’s no need to peel them!
Seasonings: Garlic butter and BBQ sauce add savory and summertime flavor to chicken foil packets. Use pre-minced garlic from a jar or buy ready-made garlic butter if time is short!
Variations
- Add slices of corn on the cob, chunks of zucchini or squash, mushrooms, or halved Brussels sprouts. Divide a bag of frozen vegetable medley veggies into each packet for extra flavor, color, and nutrition.
- Leftover rice or pasta will soak up all those buttery flavors and stretch the dish even further.

Chicken Foil Packets

Ingredients
- 4 medium yellow or red potatoes
- salt and pepper to taste
- 4 tablespoons garlic butter
- 4 chicken breasts 5 ounces each
- 1 cup barbecue sauce
Instructions
- Preheat the grill to medium-high heat.
- Lay out 4 large pieces of heavy duty foil and spray well with cooking spray.
- Slice the potatoes into ¼ inch slices and place into the center of each piece of foil.
- Season with salt and pepper and top with garlic butter.
- Place a chicken breast on top of the potatoes and generously brush each side of each chicken breast with barbecue sauce. Wrap each foil packet, folding the edges to seal tightly.
- Place foil packets on the grill, potato-side down. Cook for 25-30 minutes, flipping halfway through, until the potatoes are tender and chicken reaches 165°F in the thickest part.
