How to make Apple Pie Bars
- Press pie crusts into a prepared pan.
- Poke holes over the top of the pie crust and bake (recipe below).
- Pour cookie mix into a large bowl and cut in the butter.
- Mix pie filling and apple pie spice and spread over the top of the pie crust.
- Sprinkle the sugar cookie crumble over the top of the apple pie filling. Bake.
Tips for Success
For the perfect crust that won’t get soggy, be sure it’s evenly layered in the baking dish and ‘docked’ with lots of holes so the crust cooks all the way through.
If the filling seems too wet, scoop some of it out, and for a more uniform-looking result, take a minute or two to chop the apples into smaller pieces.

Ingredients
- 2 refrigerated pie crusts
- 1 (21 ounce can) apple pie filling
- 1 (17.5 ounce package) sugar cookie mix
- ½ cup butter
- 1 teaspoon apple pie spice or cinnamon
Instructions
- Preheat the oven to 375℉. Grease an 9×13-inch baking pan or line with heavy duty foil.
- Unroll pie crusts and place on top of each other. Use a rolling pin to spread to the size of the baking pan and press into the bottom edges of the pan. Poke the pie crust with a fork to prevent bubbles and bake for 12-14 minutes until starting to brown.
- Meanwhile, pour cookie mix into a large bowl. Use a pastry blender or fork to cut in the butter until it is the size of small peas. Set aside.
- Stir the apple pie spice into the pie filling. Spoon the pie filling over the partially baked pie crust when it comes out of the oven.
- Spread the sugar cookie mixture over the apple filling. Bake for 13-17 minutes or until crumble topping is cooked through and starting to brown.
- Allow to cool completely before slicing.
