Preheat the oven to 375℉. Grease an 9x13-inch baking pan or line with heavy duty foil.
Unroll pie crusts and place on top of each other. Use a rolling pin to spread to the size of the baking pan and press into the bottom edges of the pan. Poke the pie crust with a fork to prevent bubbles and bake for 12-14 minutes until starting to brown.
Meanwhile, pour cookie mix into a large bowl. Use a pastry blender or fork to cut in the butter until it is the size of small peas. Set aside.
Stir the apple pie spice into the pie filling. Spoon the pie filling over the partially baked pie crust when it comes out of the oven.
Spread the sugar cookie mixture over the apple filling. Bake for 13-17 minutes or until crumble topping is cooked through and starting to brown.
Allow to cool completely before slicing.

Leftovers will keep in an airtight container at room temperature for 3 days, and in the freezer for 1 month.
