Monster Magic Cookie Bars

What’s in Magic Cookie Bars?

BASE Regular magic cookie bars aren’t as hefty and ‘monster-like’ as these bars are. With a base of peanut butter and oatmeal, everything else is layered on top.

CONDENSED MILK The key to these bars is the Eagle Brand sweetened condensed milk, it bonds everything together and makes the bars extra chewy!

DOUGH This recipe is made without coconut found in the regular version, but feel free to add it! For a nut-free version, instead of using peanut butter cookie dough, use sugar cookie dough!

  • Make these cookie bars even more magical by adding some toppers like coconut, nuts, toffee bits, or dried fruits like raisins and cherries.
  • Toasting coconut and nuts in a sauté pan intensifies their flavor and makes them extra crunchy!

How to Make Monster Cookie Bars

It’s fun & easy to make these bars:

  1. Mix the peanut butter cookie dough and the oats together. Press into a pan and bake.
  2. Sprinkle half the peanut butter and chocolate chips on the cooked dough. Pour the sweetened condensed milk over the top.
  3. Cover the top with remaining peanut butter, chocolate chips and M&M’s. Bake (per recipe below) until the sweetened condensed milk has set.
  4. Remove from the oven let the monster cookie cool.

How to Store

Keep cooled cookie bars in a sealed container at room temperature where they will be good for about 4 days (if they last that long)! Individual portions can be wrapped in plastic wrap and frozen for up to a month. Simply pop one out and it will be thawed by lunchtime as a yummy midday treat!

Monster Magic Cookie Bars

All you need are 6 ingredients and 5 minutes prep time for these tasty monster cookie bars. This is sure to become your new favorite!

Ingredients  

  • 1 package peanut butter cookie dough 16 ounce package
  • 1 cup old fashioned oats
  • 1 cup chocolate chips divided
  • 1 cup peanut butter chips divided
  • 1 can sweetened condensed milk 14 ounce can
  • ¾ cup mini M&M’s

Instructions 

  • Preheat the oven to 350°F, line a 9x13 inch pan with parchment paper, and set aside.
  • Mix cookie dough and oats well.
  • Press cookie dough into bottom of prepared baking pan.
  • Bake for 15 minutes.
  • Remove from oven, and sprinkle ½ the chocolate chips and ½ the peanut butter chips over dough.
  • Pour sweetened condensed milk over everything. Sprinkle with remaining chocolate chips, peanut butter chips, and M&M’s.
  • Bake for 25 to 30 minutes or until the sweetened condensed milk has set.*
  • Remove from oven and let cool completely before slicing and serving.

Notes

*The condensed milk will begin to caramelize around the edges while remaining white in the center.
Cookie bars can be kept at room temperature in a sealed container for about 4 days.
Wrap individual portions in plastic wrap and freeze for up to a month.
