Ingredients and Variations
PROTEIN: Fresh or thawed boneless, skinless chicken breasts make the prep easy, and allow the sauce to bake into the meat. For a more elegant entrée, use a large filet of salmon, the same sauce will work with it just as well!
SAUCE: Mayonnaise had a mild, creamy flavor that works so well with many herbs and seasonings because of its high fat content. But Greek yogurt, sour cream, or even cream cheese will work.
How to Make Melt in Your Mouth Chicken
Everyone loves how easy it is to make the simple sauce, and after that it’s just a matter of picking your favorite cooking method:
- Make the sauce with mayo and parmesan cheese, garlic powder, seasoning salt, and pepper. Whisk it to combine the ingredients thoroughly (per recipe below).
- Brush the parmesan mixture generously over each chicken breast.
In the Oven:
Bake until the chicken reaches 165° F.
In the Air Fryer:
Cook sauced chicken breasts on high until the chicken reaches 165° F.
Recipe Tips and Tricks
- Choose chicken breasts of about the same size so they cook evenly.
- Rinse & pat them dry with clean paper towels so the sauce adheres to the meat.
- For oven baking, test the temperature of the chicken by inserting the thermometer in the thickest part of the meat, about 38 minutes into the baking process. Pull the chicken when it reaches 162° F, and let it “carryover cook” out of the oven. This prevents overcooking and seals the outside of the chicken, making the meat extra juicy!
- For air fryer cooking, as for any recipe, always preheat the air fryer because the outside immediately cooks, sealing the moisture.

This recipe was easy to make and as promised, quite pleasing to the tastebuds . Minimal ingredients to make an enticing recipe that will please most of my dinner guests, if not all. I reduced the salt to 1/4 tsp. I served it with long-grain wild rice and frozen broccoli/cauliflower and carrots steamed in bag with cheese sauce.

Definitely as the title says, melted in my mouth. I used light mayo, a mix of Italian cheeses and more pepper and it was on the Alfredo side but without all the fat and calories of cream. Definitely easy and highly recommend.
Hi! So I realized I only have 3 chicken breastโs thawed out for tonightโs dinner. Any advice for if I was to butterfly them and double the portion? I know the chicken will be thinner.
Hello Jennifer. If you butterfly the chicken it may cook a little quicker. I would keep checking the internal temperature. If you overcook they may not be as juicy and tender. I hope that helps.

OK, so I reeeeaaallly don’t like mayo so I have put off trying this for years until I saw a chef show not to long ago where a competitor used a mayo and herb encrusted chicken dish that the judges seemed to like. So I decided to give this a try. SO Delicious! I would encourage other “no Mayo, please” cooks to give it a try. I doubled the recipe since I had so much chicken breast, so I had a little left over that I stirred into a cabbage and veggie stir fry. It was so good on both! The veggies were flavorful and the chicken was so moist and delicious! I will try this again soon.

I recommend not adding salt to this recipe. The mayo and Parmesan cheese has enough salt. For those who donโt like it salty. Itโs a delicious recipe!! I put Panko breadcrumbs on top for some crunch. Great recipe!!
I love melt in mouth chicken. I modified this recipe because I didnโt have any seasoning salt. I added paprika and ranch seasoning alone with the rest and used grated Parmesan cheese. I have used a mixture of mayo and shredded cheddar cheese together with ranch seasoning.
absolutely delicious…after reading reviews, I did pound my chicken breasts so same height, eliminated season salt -used fresh grated parmesean baked for 40 mins – husband said restaurant worthy chicken!
Very flavorful but a bit too salty for me. Iโll make again but will reduce seasoning salt to 1/2 tsp and reduce parmesan cheese to 1/4 cup. An easy dish to prepare yet presents nicely.

Ohhh, that sounds like a great idea for the leftover mayo mixture alone for my family. I was trying to think of what to do with the leftovers after I topped the chicken. Instead I mixed it into a veggie stir fry. I’m not a mayo fan even though I loved this chicken, so I didn’t think of that. I bet the leftover chicken on a sandwich is great, too! Hi Lynn, they should work well! You may need to increase the cook time 5-10 minutes but the best way to know if they are cooked through is to use a meat thermometer and make sure they reach an internal temperature of 165ยฐF.

For best results, it is best use mayonnaise. But other readers have swapped it with sour cream or even half the mayo with sour cream and still had great results.

The recipe is amazing flavor wise! Itโs an everyday go to once we made adjustments and mastered it. For us 375 for 40 minutes kept drying it out really bad. We do 350 for 25 minutes and get perfectly cooked/tender chicken breast with mouth watering flavor. We add breadcrumbs the last 5 minutes. I recommend less cooking time or use chicken thighs to play it safe. Great over Janine rice with green beans.

My husband and I really liked this recipe. So hard to find a moist and tender boneless, skinless chicken breast recipe. The only change that I made was that I used 1/2 Miracle Whip (only mayo I had on hand) and 1/2 sour cream. Didn’t like the idea of that much Miracle Whip on baked chicken.

This is excellent recipe. Added an Italian seasoning dry mix to the season with breadcrumbs. Tender chicken and tasty. Substituted some sour cream with less mayo.

This chicken was so good. I have made it twice. The second time I did not have any Parmesan cheese so I used the Italian blend. It was awesome. Also, I cook my chicken at 425 degrees for 20-25 min and let it rest for 5 min. It came out so moist and juicy.

We loved this! Didnโt have seasoning salt so just added some salt, onion powder, and paprika. Came out great!
Although this recipe had some flavor, I think the mayonnaise is too much…I used boneless, skinless, chicken thighs and the baking dish was half full of liquid. Seemed like it needed some crunch on top, so I think I’ll cut the mayonnaise to a quarter cup, and add panko with Italian seasoning on top about 15 minutes before coming out of the oven. That should help bring a little more flavor and texture to the dish. Thanks!

I liked it but my chicken breasts were really huge so you didnโt catch much flavor in every bite. Next time I will use ones that arenโt so thick, or cut them in half. Also, I broiled the last couple minutes to brown them more. Hubby liked them and he is fussy about his chicken.

I made this recipe the other night and it was delicious!! Very moist~ Easy prep ~ a little salty, but that can be easily adjusted. I used pecorino/romano cheese instead of parmesan cheese since that’s what we like. Will definitely be a regular in our family.

Iโve made this 3 times and we just love it. I used grated parmigiana cheese in the Mayo mixture and put some shredded parmigiana cheese on top of the chicken at the end. So good.

I donโt usually like chicken breast but this is the best chicken breast Iโve ever eaten. It was so moist and tasted great. Have you got a suggestion for something besides Parmesan? Would cream cheese work with the mayonnaise or another cheese?

Yeah some of the mixture falls off but I might have put too much, BUT I love it saucy no matter what! Iโve made this recipe MANY times and love it so so much. Everyone I make it for is likeโฆ โMayo?? How long would I cook if I use chicken tenderloins?
Chicken Tenders would probably take 20-25 minutes to cook at 375ยฐF. You might want to check them at around 15 minutes if they are small!

It tasted great! But when it came out of the oven the entire mixture was just floating in the bottom and none was on the chicken. I had to take it out and scoop it up, put it back on the top, and bake again. The mixture still didnโt stay on. I followed the recipe exactly as called for. Any tips? Hi Candice, we like to cook our chicken breasts at 370ยฐF in the air fryer for about 15-20 minutes or until they reach an internal temperature of 165ยฐF. Make sure you flip them over about 10 minutes into cooking.
