- 2 pounds boneless skinless chicken breasts
- 2 tablespoons taco seasoning
- 1 (16 ounce) jar salsa
- 1 (15 ounce) can whole kernel corn drained
- 1 (15 ounce) can black beans drained and rinsed
- 8 ounces cream cheese cubed
Instructions
- Place the chicken in the bottom of a 6-quart slow cooker. Sprinkle taco seasoning over the chicken.
- Add the salsa, corn, and black beans to the slow cooker.
- Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours.
- Once fully cooked, remove the chicken from the slow cooker and shred.
- Return the shredded chicken to the slow cooker, along with the cream cheese. Cover and cook 15 more minutes, or until cream cheese is softened
- Stir the cream cheese into the other ingredients. Serve on rice, tortillas, chips, or on its own!
