Ingredients

Carrots: Use brightly colored carrots that are fresh and unblemished. Rainbow carrots are an option, too, but use store-bought, if possible, since they tend to be firmer and will bake up crisper than ones from the garden.

Seasonings: Simple seasonings include garlic powder and kosher salt, for a savory coating that tastes great with the sweet starchiness of carrots.

Oil: Go for extra virgin olive oil for the best flavor, but light or refined olive oil can be used with flavor success, too.

Variations

  • Carrots taste amazing with different kinds of simple seasonings. Experiment with a blend of garlic powder, paprika, salt, and pepper for a classic flavor.
  • For a bit of spice, add some chili powder or cumin. Prefer something sweet? Try cinnamon and a touch of brown sugar.

Shortcut Tips

  • In a rush? Try using baby carrots that don’t need peeling. For larger baby carrots, line them up on a cutting board and cut them lengthwise in half. Small thin baby carrots can be baked as is, without cutting.
  • Or, use a bag of carrot matchsticks. As these are thinner, they will likely need less time in the oven, so check every 5 minutes for doneness during baking, stirring halfway through. This method saves prep time and gives you crispy, flavorful carrot fries in a flash.
  • Experiment with baking carrot fries in the air fryer instead of the oven, at 400oF for 15 minutes. Shake the basket to toss at 5-minute intervals.

Leftovers

Store leftovers in an airtight container for up to 4 days. Re-crisp them under the oven broiler, or in an air fryer for a few minutes until hot. Or simply use them as-is for a tasty topper on a corn and black bean salad or a simple garden salad.

  • Preheat the oven to 425°F.
  • Peel the carrots and cut in half (or in quarters if large) lengthwise. Cut into fries.
  • In a medium bowl, toss together the carrots, olive oil, garlic powder and salt.
  • Spread the carrots in a single layer on a baking sheet and bake for 10 minutes.
  • Flip the carrots over and bake for an additional 8 to 10 minutes or until tender and edges are starting to brown.

Notes

This recipe works best with grocery store carrots, garden carrots tend to be a bit softer.
Leftovers will keep in the refrigerator for 4 days.
