Equipment

Ingredients  

  • 2 pounds boneless skinless chicken breasts
  • 2 tablespoons taco seasoning
  • 1 (16 ounce) jar salsa
  • 1 (15 ounce) can whole kernel corn drained
  • 1 (15 ounce) can black beans drained and rinsed
  • 8 ounces cream cheese cubed

Instructions 

  • Place the chicken in the bottom of a 6-quart slow cooker. Sprinkle taco seasoning over the chicken.
  • Add the salsa, corn, and black beans to the slow cooker.
  • Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours.
  • Once fully cooked, remove the chicken from the slow cooker and shred.
  • Return the shredded chicken to the slow cooker, along with the cream cheese. Cover and cook 15 more minutes, or until cream cheese is softened
  • Stir the cream cheese into the other ingredients. Serve on rice, tortillas, chips, or on its own!

Notes

Some taco seasonings are saltier than others. Start off with a bit less, and add more at the end of cooking if needed.
