Ingredients

Tortillas: Choose any size of flour tortillas for this recipe as long as they fit in the pan. Low-carb wraps can be used if you want a keto-friendly pizza quesadilla.

Pizza Sauce: Zest up that jar of pizza sauce with a DIY Italian seasoning blend or a simple dash of garlic powder and red pepper flakes.

Cheese: Any cheese is perfect on pizza! Shred a block of mozzarella, Monterey Jack, or cheddar for the best melt. Short on time? Use pre-shredded cheese!

Pepperoni: Besides pepperoni, use any cooked or leftover Italian sausage, ground beef, chicken, or turkey.

Variations

Omit the meat and use refried beans or rice and veggies like avocados, olives, bell peppers, onions, or mushrooms for a vegetarian version. Be sure to chop veggies into small pieces so the quesadillas stick together properly.

How to Make Pizza Quesadillas

  1. Brush one side of the tortilla with oil and flip over.
  2. Top with pizza sauce, cheese, and pepperoni and fold in half.
  3. Repeat with remaining tortillas.
  4. Fry pizza quesadillas in a skillet (recipe below) until golden on the outside.
  5. Cool before cutting.

Helpful Hints

  • Avoid overfilling pizzas so the cheese can hold everything together when it’s melted.
  • Get a perfectly firm and crispy tortilla by lightly brushing it with oil and frying when the pan is properly heated.
  • Got a hungry crowd of kiddos? Bake multiple pizza quesadillas by baking them on a parchment-lined baking sheet at 400°F until the cheese is melted and the tortillas are crisp.

Leftovers

Keep leftover pizza quesadillas in a covered container in the refrigerator for up to 3 days and reheat them in the microwave but the tortilla will get soft. Pop them in the oven at 375°F or fry them in a non-stick skillet if you want the outsides to be crispy again.

Freeze pizza quesadillas between sheets of parchment paper in zippered bags for up to 3 months. Thaw before reheating then bake, fry, or air fry until reheated.
