Pizza Sauce: Zest up that jar of pizza sauce with a DIY Italian seasoning blend or a simple dash of garlic powder and red pepper flakes.
Cheese: Any cheese is perfect on pizza! Shred a block of mozzarella, Monterey Jack, or cheddar for the best melt. Short on time? Use pre-shredded cheese!
Pepperoni: Besides pepperoni, use any cooked or leftover Italian sausage, ground beef, chicken, or turkey.
Variations
Omit the meat and use refried beans or rice and veggies like avocados, olives, bell peppers, onions, or mushrooms for a vegetarian version. Be sure to chop veggies into small pieces so the quesadillas stick together properly.
How to Make Pizza Quesadillas
- Brush one side of the tortilla with oil and flip over.
- Top with pizza sauce, cheese, and pepperoni and fold in half.
- Repeat with remaining tortillas.
- Fry pizza quesadillas in a skillet (recipe below) until golden on the outside.
- Cool before cutting.

Pizza Quesadilla

Ingredients
- 4 large flour tortillas
- 2 tablespoons Vegetable Oil
- 8 ounces pizza sauce plus additional for serving
- 2 cups mozzarella cheese shredded, or Italian blend cheese
- 1 cup Pepperoni Slices
Instructions
- Place a tortilla on a cutting board and brush one side with oil.
- Flip the tortilla over and add 3 tablespoons pizza sauce on half of the tortilla.
- Top with ½ cup cheese and ¼ of the pepperoni slices.
- Fold the tortilla in half to cover the side with the toppings.
- Repeat with one more tortilla .
- Heat a large nonstick skillet over medium heat.
- Add two folded tortillas to the skillet and cook until golden, about 2 to 3 minutes. Flip and cook until golden on the second side. Transfer to a cutting board to cool for 2 to 3 minutes.
- Repeat with the remaining 2 tortillas. Serve with additional pizza sauce for dipping.
