Instructions
Place a tortilla on a cutting board and brush one side with oil.
Flip the tortilla over and add 3 tablespoons pizza sauce on half of the tortilla.
Top with ½ cup cheese and ¼ of the pepperoni slices.
Fold the tortilla in half to cover the side with the toppings.
Repeat with one more tortilla .
Heat a large nonstick skillet over medium heat.
Add two folded tortillas to the skillet and cook until golden, about 2 to 3 minutes. Flip and cook until golden on the second side. Transfer to a cutting board to cool for 2 to 3 minutes.
Repeat with the remaining 2 tortillas. Serve with additional pizza sauce for dipping.
Notes
Leftovers will keep in an airtight container in the refrigerator for 3 days and in the freezer for 3 months.
