Holly’s Recipe Highlights: Easy Caramel Sauce

  • Why Make It: Three simple, everyday ingredients come together to make a rich, buttery caramel sauce, with no candy-making skills or thermometer required.
  • Technique: A gentle boil melts the butter and fully dissolves the brown sugar, creating a smooth, rich sauce.
  • Tools: A heavy-bottomed saucepan distributes heat evenly, helping prevent scorching and ensuring a smooth, consistent sauce.

Ingredient Notes

  • Butter: Butter adds rich flavor and gives the sauce its smooth texture. Both salted and unsalted butter work well, while salted butter adds a subtle sweet-and-salty contrast.
  • Brown Sugar: Pack the brown sugar firmly when measuring for an accurate amount. Light brown sugar gives the sauce a classic caramel flavor, while dark brown sugar adds a deeper molasses flavor and a darker color.
  • Milk: Regular milk keeps this shortcut caramel simple and easy to make. For a richer, creamier sauce, use whole milk or half-and-half.

Favorite Variations

  • Salted Caramel: Add a small pinch of flaky or fine sea salt to balance the sweetness.
  • Vanilla Caramel: Stir in a splash of vanilla after removing the sauce from the heat for extra flavor.

How to Make Easy Caramel Sauce

  1. In a saucepan, bring all ingredients to a boil over medium heat (full recipe below).
  2. Continue cooking until the caramel reaches the desired consistency.
  3. Transfer to a heat-safe jar and let it cool.

Serve warm over ice cream or your favorite desserts.

Tips for Smooth Caramel

  • Keep the Boil Gentle: Avoid high heat, which can cook the sauce too quickly before the sugar has fully dissolved.
  • Check the Texture: Let a small drop cool, then rub it between two fingers. A smooth sauce should feel completely silky, not gritty.
  • Remember It Thickens: Remove the sauce from the heat while it’s slightly thinner than your desired final consistency, as it will continue to thicken as it cools.
  • Leave the Sides Alone: Pour the finished caramel into a storage container without scraping the sides of the pan, which can introduce hardened or crystallized bits into the smooth sauce.
  • Fix an Overly Thick Sauce: Gently warm the caramel with a small splash of milk, stirring until it reaches your desired consistency.

Storage and Reheating Tips

  • Refrigerator: Keep leftover sauce in an airtight container in the refrigerator for up to 1 week
  • Freezing: It will keep in the freezer for up to 4 months. Use a freezer-safe container with room for expansion.
  • Reheating: The caramel thickens when cold. Reheat gently in short microwave bursts, stirring between each, or warm the jar in hot water until loosened. Avoid overheating, which can scorch the sugar.
