Chicken: Leftover chicken breasts, turkey, or freshly cooked shrimp are perfect proteins for this recipe!
Spaghetti: Choose heavier pastas like thick spaghetti, bucatini, fettuccine, penne, or larger macaroni shells that the sauce can cling to.
Sauce: No need to buy the name brand of cream of mushroom or cream of chicken soup. Short on time? Stir in a jar of Alfredo sauce instead of the broth, soup, and evaporated milk in Step 4. Add a little milk to thin if necessary.
Mushrooms: Canned or fresh mushrooms work great in this recipe. If using fresh, sauté them with the onions in Step 3 for extra umami flavor.
Cheese: Any cheese works in a tetrazzini! Shredded cheddar, mozzarella, parmesan, or a Mexican cheese blend will taste great.
Variations: Feel free to toss in a bag of frozen mixed veggies in Step 5, no need to thaw! Top the casserole with sliced almonds or seasoned breadcrumbs on top of the cheese for a crispy topping! - Cook spaghetti (recipe below).
- Cook onions in butter then whisk in the other sauce ingredients.
- Mix spaghetti, mushrooms, and chicken in a casserole dish. Add the mushrooms sauce.
- Sprinkle on cheese and bake until the cheese is melted.
Garnish with sliced green onions, if desired.
Tips For Success
- For best results, cook pasta to al dente as it will continue to cook as it bakes. Save a little pasta water to thicken the sauce in Step 4 if needed.
- No cooked chicken? Poach chicken breasts in boiling water for 20 minutes and shred or chop as desired once cool enough to handle.
- Prep easy chicken tetrazzini up to a day ahead and keep it covered in the refrigerator until ready to bake (you may need to add minutes to the cooking time to ensure the dish is cooked through).

Easy Chicken Tetrazzini
Ingredients
- 8 ounces spaghetti
- 4 tablespoons butter
- 1 small onion diced
- ½ cup chicken broth low-sodium
- 2 (10.5 ounce cans) condensed cream of mushroom soup
- 12 ounces evaporated milk
- 2 cups cooked chicken (or turkey), diced
- 8 ounces canned sliced mushrooms drained
- ½ cup shredded cheddar cheese
Instructions
- Preheat oven to 350℉.
- Cook spaghetti according to package directions. Drain.
- Meanwhile, in a large skillet melt butter over medium heat. Add onions and cook until tender, about 3-4 minutes.
- Whisk in chicken broth and mushroom soup until fully combined. Gradually add the evaporated milk stirring constantly until smooth. Taste and season with salt and pepper as desired.
- In a 9×13-inch baking dish, mix cooked spaghetti, mushrooms, and chicken (or turkey). Pour in sauce. Top with cheese.
- Bake for 20-25 minutes until cheese is melted and sauce is bubbly.

Ive been making this recipe for several years. I tried it as soon as I found it! It is a crowd pleaser. I am gluten free and luckily my Kroger carries gluten free cream soup. I use one can of cream of chicken and one can of cream of mushroom.
