Ingredient Notes for Avalanche Cookies

white candy melts , chocolate chips , rice cereal , peanut butter , marshmallows with labels to make Avalanche Cookies
  • White Chocolate: Use white candy melts or white chocolate chips. Candy melts melt smoothly and set firmly, while white chocolate chips melt more slowly.
  • Creamy Peanut Butter: Use regular creamy peanut butter for the best results. Natural peanut butter may separate and soften the cookies, preventing them from holding together nicely.
  • Crisp Rice Cereal: Adds light crispness and crunch. Fold them in gently to keep it from breaking into powder.
  • Mini Marshmallows: Use mini marshmallows, mini colored marshmallows, or chop up larger marshmallows and mix them in evenly for chewy bites.
  • Miniature Chocolate Chips: Sprinkle on top while soft for extra flavor and a finished look.

How to Make Avalanche Cookies

  1. Microwave white chocolate in short bursts, stirring until smooth.
  2. Stir in peanut butter until fully combined.
  3. Fold in cereal and marshmallows. (Full recipe below.)
  4. Scoop onto the tray and top with mini chocolate chips, then chill in the fridge until set.

No-Bake Cookie Secrets

  • Work Quickly: The mixture will start to set as soon as the cereal and marshmallows are added.
  • Use Parchment: Parchment paper makes the cookies easy to remove after chilling.
  • Do Not Overheat Chocolate: Melt in short bursts, stirring after each until smooth. Overheating the chocolate can cause it to seize.
  • Add Toppings Right Away: Sprinkle on the chocolate chips right away before the cookies begin to set so they stick nicely.
  • Chill Before Stacking: Let the cookies set completely so they hold their shape.
  • Soften Before Serving: Let chilled cookies sit for a few minutes before serving.
