4 Ingredient Banana Bread
Bananas – Ripe bananas pack the sweetest flavor and blend better than fresh and firm bananas, but still can be used. For a pop of extra banana flavor, add a teaspoon of banana extract, if desired.
Cake Mix – Yellow cake mix will showcase the flavor of the bananas but you can also use a spice cake, a chocolate cake, or any flavor that goes with bananas.
Add-Ins – Chocolate chips, peanut butter chips, toasted walnuts or pecans, and even frozen berries will make a new recipe every time (but are optional).
How to Make Cake Mix Banana Bread
This recipe is simple to whip up:
- While oven is preheating, mash bananas and mix them with eggs (per recipe below).
- Add the box cake mix (do not add any extra oil or eggs)
- Add in any extras like chocolate chips or nuts, if using.
- Pour batter into prepared loaf pans and bake.
Recipe Tips for Success!
- Many boxed cake mixes are no longer 13.5 oz, so check the outside of the box to be sure you have the right size of cake mix.
- Room-temperature eggs will whip up faster and easier than cold eggs, for the best results, set the eggs out while you are preparing the loaf pans and mashing the bananas.
- If adding chocolate chips, nuts, or berries, toss them in a few tablespoons of flour before adding to the mix in Step 4. This will prevent them from sinking to the bottom of the cake.
- For easy and even slicing, make sure the bread is fully cooled. Gently cut in 1 ½” slices with a bread knife or use an unflavored piece of dental floss and pull down evenly on both sides using both hands for perfect slices every time.
- Use leftover banana bread to make French toast sticks for the kids!
Storage Solutions
Keep cake mix banana bread in a covered container or bread bag at room temperature for up to 3 days, if pre-sliced, keep the slices wrapped in the refrigerator for up to 4 days. Freeze a whole cooled loaf or slices by wrapping it in plastic wrap and freeze for up to one month.
