Ground Beef Soup

Make this easy ground beef soup for a simple and hearty one-pot meal loaded with meat, potatoes, and vegetables.

  • 1 pound lean ground beef
  • 1 medium onion , diced
  • 2 medium potatoes , peeled and diced in ¾" pieces
  • 3 cups beef broth
  • 28 ounces canned diced tomatoes
  • 10.75 ounces condensed tomato soup
  • 2 teaspoons Worcestershire sauce
  • 3 cups frozen mixed vegetables , thawed
  • salt and pepper , to taste


  • In a large pot over medium-high heat, brown ground beef and onion until no pink remains. Drain any fat.
  • Add potatoes, broth, tomatoes, tomato soup, and Worcestershire sauce. Cover and simmer for 10 minutes.
  • Stir in vegetables and simmer uncovered for an additional 15-20 minutes or until potatoes are tender. Season with salt and pepper to taste.


  • Brown ground beef just until cooked, as it will continue to cook while it simmers.
  • Leave the potatoes unpeeled if you want a more rustic dish. Just scrub well and excise any sprouted eyes.
