Chicken is marinated in a flavorful lemon rosemary olive oil marinade for this delicious meal!
- 3 pounds chicken bone in, skin on
- 1 lemon juice and zest
- 1/4 cup olive oil
- 2 sprigs fresh rosemary
- 1 teaspoon salt
- 1 teaspoon pepper
- 4 cloves garlic minced
Combine all ingredients in a gallon sized resealable plastic bag. Refrigerate for at least an hour up to overnight.
When ready to cook, preheat oven to 425°F. Arrange chicken pieces in a single layer on a parchment lined baking sheet. Bake for 30-35 minutes or until the internal temperature reaches 165°F.
