What’s in Creamy Potato Soup?

Dairy: The cream cheese makes this recipe extra creamy. It’s combined with milk and cheddar cheese for an extra delicious dish! The higher the fat content of the milk the creamier the soup will be, you can also swap the cheddar cheese for any of your favorites: sharp cheddar, gruyere, or a flavored havarti!

Mashed Potatoes: Mix in leftover mashed potatoes or baked potatoes. For a smoother consistency stir in mashed potatoes, for a chunkier soup try leaving some potatoes unmashed, or roughly diced baked potatoes.

Add Some Variety

  • Add in some leftover turkey, chicken, or ham. I love to sprinkle with bacon before serving!
  • Toss in some vegetables likes leeks, kale, or broccoli.
  • Serve with mix-ins or toppings like fried onions, crumbled sausage, green onions, or jalapenos.

How To Make Creamy Potato Soup

  1. Melt cream cheese with spices (full recipe below).
  2. Whisk in milk and chicken broth until smooth, and stir in the mashed potatoes.

Creamy Potato Soup

This is the best potato soup recipe because it's so easy, cheesy and delicious!

Ingredients  

  • 3 cups mashed potatoes
  • ½ cup chicken broth divided
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • 4 ounces cream cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • salt and pepper to taste

Instructions 

  • Melt cream cheese in a large saucepan over medium heat with the onion, garlic powder, and 1 tablespoon of broth.
  • Slowly incorporate the remaining chicken broth and whisk until it is smooth.
  • Stir in mashed potatoes and milk and bring to a slow boil over medium heat. Let simmer for 5 minutes.
  • Remove from heat and stir in cheddar cheese.
  • Season with salt and pepper to taste.
