Chocolate Chip Cookie Lasagna
- Everyone loves a chocolate dessert. This one comes together in minutes and is perfect to take to a picnic or potluck.
- Ready-made cookie dough is the base for this super easy cookie lasagna recipe, so keep extra dough on hand for any last-minute party invites.
- Prepping for a party? Save time by making chocolate chip cookie lasagna a day in advance and keep it in the refrigerator covered until ready to serve.
Dessert Ingredients
DOUGH: Chocolate chip cookie dough is easy to get, use, and tastes delish in this recipe. Mix it up and use peanut butter cookie dough, or sugar cookie dough, or even chocolate fudge.
FILLING: Rich, chocolate pudding is the second layer in chocolate chip cookie lasagna, but banana, butterscotch, or vanilla pudding would be fun alternatives, too.
TOPPING: Mini chocolate chips, peanut butter chips, toffee pieces, colorful sprinkles, even chopped nuts or maraschino cherries make this dessert totally customizable. Sliced strawberries are a colorful topping or grate some baker’s chocolate over the top for an elegant touch.
How to Make Cookie Lasagna
Scoop up this fun lasagna with cookie ‘spoons’.
- Press cookie dough into a casserole dish & bake.
- Prep cream cheese mixture and spread on top of the cooled cookie layer.
- Spread pudding on top of the cream cheese mixture and top with remaining cool whip. (As per recipe below)
Sprinkle with chocolate chips and chill before serving. Garnish with Best Chocolate Covered Strawberries, and make the cookie ‘spoons’ out of Easy Shortbread Cookies.
Best Dessert Tips
- Room temperature cream cheese will blend smoother and faster with the other ingredients, shaving time off the recipe.
- Add a dash or two of flavored extract (banana, rum, caramel, coconut) instead of vanilla to change up the flavors.
- Purchase extra creamy cool whip because it will whip up fluffier, giving the casserole extra height. Use instant pudding instead of the cooked variety for the best consistency.
- Store leftovers in the refrigerator for up to 4 days.
Recipe Time Savers
Buy pre-made pudding cups instead of making the pudding from scratch. Chill in the refrigerator or freeze up to a day in advance. Cut into small squares and freeze for a grab-and-go dessert for one!
