This no-bake fresh strawberry pie recipe is so decadent and so deceptively easy to make.
This fresh strawberry pie is as easy as it is delicious! Juicy berries are mixed with a sweet Jello glaze and piled into a flaky crust, then topped with whipped cream for the perfect no-fuss summer dessert.

Holly’s Sweet Slices of Summer
- Flavor: Sweet strawberries and Jello in a buttery crust are the perfect summer treat.
- Difficulty: Minimal effort meets maximum appeal in this easy recipe.
- Prep note: Make up to a day ahead and serve when it’s extra cold.
Strawberry Pie Provisions
Strawberries: Fresh strawberries are a must-have in this recipe. Any size works; be sure to wash them and remove the tops.
Filling: Strawberry Jello, cornstarch, and sugar create a thick glaze that suspends the strawberries and adds sweet-tart flavor to the strawberry pie. No need to buy the name brand if a store brand is available.
Crust: Use a premade graham cracker crust, a roll-out pie crust, or make your own and freeze extra for future fruit pies.
Sweet Swaps & Substitutions: Make a patriotic red, white, and blue pie with fresh blueberries added to the strawberries in Step 3. Raspberries, blackberries, chopped green apples, or cooked rhubarb will make this recipe new and different every time.
How to Make Fresh Strawberry Pie
- Place prepared strawberries in a bowl.
- Cook cornstarch, Jello, sugar, and water until thickened (full recipe below).
- Pour glaze over strawberries and stir until they’re coated.
- Add the strawberry mixture to the prepared pie crust and refrigerate until set.
Serve with freshly whipped cream or a scoop of vanilla ice cream and fresh berries or a sprig of mint.
Pro Pie Tips
- Allowing the glaze to cool prevents the strawberries from cooking so they remain firm.
- For the best results, a graham cracker crust will stay firmer than a flour-based crust.
- Save extra whole strawberries with the tops on for a colorful garnish.
Perfect Pie Preservation
Keep leftover strawberry pie covered in the refrigerator for up to 5 days (if it lasts that long)! Freezing isn’t recommended as the gel texture won’t be firm once it’s thawed.

I haven’t tried it so I can’t say for sure Michele, but I think that should work just fine. If you try it I would love to hear how it turns out!
