Chicken Lettuce Wraps

These chicken lettuce wraps are super easy and packed with Asian-inspired flavor.

Ingredients  

  • 1 pound ground chicken
  • 1 teaspoon olive oil
  • 1 teaspoon fresh ginger grated
  • 1 clove garlic minced
  • 1 tablespoon butter
  • 4 teaspoons creamy peanut butter
  • ¼ cup soy sauce
  • 1 tablespoon water
  • 2 green onions
  • butter lettuce
  • radishes optional when serving
  • cucumbers optional when serving

Instructions 

  • In a small bowl, combine peanut butter, soy sauce, and water; set aside.
  • In a skillet over medium heat, add oil. Once hot, add ground chicken and cook until browned, breaking up chicken as it’s cooked.
  • Add butter, ginger, and garlic and cook for another minute, stirring as needed.
  • Pour the sauce over the chicken mixture. Add green onions. Cook another minute.
  • To serve, add some chicken mixture into a lettuce leaf. Top with desired added vegetables.
