Broccoli: Pre-cut broccoli florets are perfectly bite-sized and always available. Other veggies to consider adding to the pan are frozen cauliflower florets, green beans, halved Brussels sprouts, or sliced carrots. Be sure that whatever frozen veggies you choose are all about the same size so they cook uniformly together.

Seasonings: Salt and pepper are just the basics for seasoning broccoli! Garlic powder, taco seasoning, or ranch dressing mix will make a new recipe every time.

Variations: Drizzle a little soy sauce or balsamic vinegar over the broccoli in Step 2 for more depth of flavor. Sprinkle some sesame seeds, sliced almonds, bacon bits, feta crumbles, or parmesan cheese as an elegant garnish before serving.

Roasted Frozen Broccoli

Roasted frozen broccoli turns crisp and golden in the oven, making it a quick and flavorful side dish.

Ingredients  

  • 16 ounces frozen broccoli florets
  • cooking spray
  • salt and pepper to taste

Instructions 

  • Preheat the oven to 450°F. Line a baking sheet with parchment paper.
  • Spread the frozen broccoli out on the baking tray. Spray with cooking spray. Toss to coat.
  • Roast for 5 minutes. Season with salt and pepper and stir. Return to the oven and bake for an additonal 10-12 minutes or until the broccoli is heated and the edges are slightly browned.

Notes

Frozen broccoli is softer in texture than fresh broccoli.
Cook broccoli right from frozen.
Parmesan cheese can be added and the broccoli can broiled just before serving.
Keep leftover roasted broccoli in an airtight container in the refrigerator for 5 days.
