Ingredients and Variations

CUPCAKES: Buy cupcakes at the local supermarket or bakery or bake and freeze lemon cupcakes or cherry cupcakes in any size you want so they’re always ready!

FROSTING: Any can of frosting works, even a white can of frosting can be tinted green with a little food coloring.

MARSHMALLOWS: Mini marshmallows come in white or pastel colors, either will work!

GUMDROPS: Cut larger gumdrops in half horizontally if you can’t find smaller ones. Jelly beans are excellent centers for marshmallow cupcakes, too!

VARIATIONS: Chocolate cupcakes with chocolate frosting will look like a garden under the marshmallow flowers.

How to Make Flower Cupcakes

  1. Spread a little frosting on each cupcake.
  2. Place a gumdrop in the center.
  3. Flatten mini marshmallows and slice into 4 equal pieces.
  4. Dip the cut side into colored sugar and arrange the ‘petals’ around the gumdrop, sugar side up.

Recipe Tips and Tricks

  • Caster sugar is the same as regular white sugar, but it is extra fine and will add more color to your cupcakes.
  • Make your own colored sugar by putting a tablespoon of sugar in a small zippered bag and adding a drop or two of any food coloring you like. Shake the bag until the sugar is even colored.
  • Use an empty egg carton to keep the colored sugars separated.

Time Saving Tips

Buy cupcakes already frosted and save a step! Make flower cupcakes up to a day ahead and keep them covered with plastic wrap at room temperature until ready to enjoy!

  • 12 cupcakes any flavor
  • 1 (16 ounce container) frosting
  • 1 ½ cups mini marshmallows
  • colored sanding sugar
  • 12 gumdrops

Instructions

  • Spread a small amount of frosting on each cupcake. It doesn’t need to be perfect, since most of it will be covered by toppings.
  • Place a gumdrop or round candy piece in the center of each cupcake.
  • Flatten each of your marshmallows with the palm of your hand, then use a knife or round pizza cutter to slice each marshmallow into 4 even slices.
  • Dip the cut side (or the side which curls inward, if both sides are cut) into the colored sugar or sprinkles. Place each of the slices, sugar or sprinkle side up, onto the cupcake around the center gumdrop, in a flower petal pattern.
