Using the stuffing mix, butter, and water, prepare the stuffing according to package directions. Cool.
While the stuffing is cooling, preheat a waffle iron.
Mix eggs into the cooled stuffing.
Brush the waffle iron with vegetable oil, place ½ cup into each waffle space, and gently press.
Close the waffle iron and cook 5 minutes or until browned.
While the waffle is cooking, heat the gravy. Serve waffles with gravy and garnish with parsley if desired.
