Wash and dry the sweet potato. Poke with a fork 3-4 times on each side.
Microwave on high for 3 minutes.
Flip the sweet potato and microwave for an additional 2 minutes or until tender when pierced with a fork.
Allow to cool 5 minutes before cutting open. Serve with butter.
Notes
Leftover sweet potato will keep in an airtight container in the refrigerator (or wrap in plastic wrap), for 3-5 days. They can also be frozen and will keep in the freezer for 6 months.
