For The Sauce
1cupbarbecue sauce
1cupsweet orange marmalade
3tbsplow-sodium soy sauce
Instructions
Cook chicken according to package directions.
While the chicken is cooking, combine the barbecue sauce, orange marmalade, and soy sauce in a small saucepan over medium-low heat. Simmer uncovered for 10 minutes, stirring occasionally.
Once the chicken is cooked, transfer it to a large bowl and toss it with the sauce.
Serve over rice or noodles.
Notes
For Homemade Chicken:
1 lb chicken breast, cubed
1 cup cornstarch
2 eggs
vegetable oil for frying
Dip each piece of chicken in cornstarch, then into the beaten eggs, and in the cornstarch again. Add enough oil to cover the bottom of the pan. Heat over medium heat to 350°F. Add the chicken and cook for 2 to 3 minutes on each side or until crispy and cooked through.
