Chocolate Cream Cheese Layer

cream cheese

Instructions
Cookie Crust Layer
Grease a 9 x 13 inch baking dish, and preheat oven to 350˚F.
In a medium sized mixing bowl, cream together shortening, butter and ¾ cups of sugar until fluffy. Add egg and vanilla extract. Blend together.
In a separate bowl, combine baking powder, flour, and salt.
Gradually add flour mixture to creamed mixture and mix until well blended. Spread over prepared baking dish.
Bake for 15 minutes or until the edges are slightly golden brown.
Remove from oven and cool.
Chocolate Cream Cheese Layer
Add white chocolate chips to a microwaveable bowl. Microwave for 30 second intervals, stirring in between each, until just melted.
Mix melted chocolate with cream cheese until blended.
Spread mixture evenly over cookie crust. Refrigerate until cool.
Top Layer
In a small saucepan, mix together ½ cup sugar and cornstarch. Add strawberries and water.
Bring to a boil over medium-high heat, then remove and let cool for 10 minutes.
Pour strawberry mixture over cream cheese layer and refrigerate for 2 hours.
Once thoroughly cooled, top with Cool Whip and serve!
