1 ½ tablespoonsfresh parsleyor 1 tablespoon dried parsley
1box stuffing mixany variety, 6 oz each
2cupsreduced sodium chicken broth
Instructions
Preheat the oven to 350°F. Lightly grease a 1 quart baking dish.
Heat butter in a medium skillet over medium heat. Add onion, celery, and mushrooms, cook until tender, about 5-6 minutes.
Place the box stuffing mix into the prepared baking dish. Add the onion mixture, parsley and 1 cup of broth. Stir and let rest 3 minutes. Add the remaining broth a bit at a time to reach desired consistency.
Bake uncovered until golden, about 20-25 minutes.
Notes
This recipe can be doubled or tripled and cooked in a 9x13 pan for 30 minutes.
Refrigerate leftovers in a covered container for 3-4 days.
Reheat on a hot griddle, in the oven or in the microwave.
