Easy Shrimp Alfredo is so simple to make, it's perfect for a mid-week meal. But it's also decadent enough to serve as a special dinner for family or guests.
Cook fettuccine according to package. Drain and reserve ½ cup of pasta water.
In a separate saucepan, melt butter and olive oil over medium-high heat.
Toss shrimp with garlic, lemon zest, salt & pepper. Add to the heated pan and cook until pink, about 2 minutes per side. Remove the shrimp from the pan and set aside.
Add the alfredo sauce to the pan and heat through. Remove from the heat and toss with cooked fettuccine and shrimp adding additional pasta water if needed.
Garnish with fresh parsley and additional parmesan.
Notes
Homemade Alfredo Sauce:
4 Tablespoons butter
1 ½ cups heavy cream
1 ½ cups parmesan cheese finely shredded
1 pinch nutmeg
½ teaspoons salt & pepper (each)
Bring butter and cream to a simmer, and cook 5-7 minutes or until slightly thickened. Remove from heat, stir in parmesan cheese and a pinch of nutmeg. Season with salt & pepper.
Reserved pasta water is perfect to keep noodles moist. And also helps thin a sauce that becomes too thick.
Shrimp cook fast, so watch carefully. Once they turn pink, they are cooked!
