In a large bowl, stir together dry ingredients: flour, sugar, baking powder, cinnamon and salt.
In a medium bowl whisk together eggs and milk until fully combined.
Add the egg mixture to the dry ingredients and whisk to fully combine. Scrape the sides and bottom of the bowl with a spatula.
Add the chopped apples to the batter and stir to combine and fully coat the apples.
Heat the oil in a deep-fryer or larger skillet to 375 degrees F.
Using a small ice cream scoop, drop batter into the hot oil. Don't make them too large. They will expand and you risk having the outside cooked while the middle is still raw.
Fry until golden on both sides, about 5 minutes depending on the size of the fritter.
Fry the fritters in batches using two forks or chopsticks to move and turn them. Watch carefully to avoid burning or overcooking on one side more than the other.
Once fried, remove from the hot oil using a slotted spoon or two forks and place on paper towels to drain excess oil.
If you decide to toss them in cinnamon sugar, do that while the fritters are still warm.
Glaze:
Add sugar and vanilla to a medium bowl, add milk one tablespoon at a time and stir to combine until smooth, with no lumps. If the mixture is too thin, add more confectioners sugar. If the mixture is too thick, add more milk, 1 tablespoon at a time.
Drizzle the glaze over the just slightly warm fritters. Let it settle.
Cinnamon Sugar Coating:
Mix sugar and cinnamon in a large bowl. Add warm fritters to the bowl and toss to coat.
