Homemade Banana Bread Granola
This easy homemade granola is fun to make at home with ingredients you probably already have in the pantry. It's an energy packed snack or topping.

old-fashioned rolled oats

golden flaxseed meal

pecans

unsalted butter

vanilla extract

large egg white
beaten

banana chips
Instructions
Preheat the oven to 350˚F.
Add the oats, flaxseed meal, pecans, cinnamon, and salt to a large bowl.
Whisk together the maple syrup, butter, and vanilla.
Pour the butter mixture onto the dry mixture and stir well. Add beaten egg white and mix.
Spread onto a rimmed baking tray and bake for 15 minutes, tossing halfway through.
Stir in banana chips and bake until the oats are golden, about 15 minutes.
Cool to room temperature. Add to zippered bags or sealed containers and store at room temperature for about a month.
Notes
The egg white is in this recipe to help the granola form clusters. You can omit it if you prefer.
