Pea Salad with Bacon
This easy pea salad with bacon is creamy, crunchy, and full of smoky cheddar flavor.

Ingredients

frozen peas
thawed

cup
prepared coleslaw dressing
*see notes to make homemade

shredded cheddar cheese

cup
bacon bits
¼
cup
finely diced red onion
Instructions
Thaw peas and pat dry with a paper towel.
In a large bowl, combine the peas, coleslaw dressing, cheddar cheese, bacon bits, and red onion. Toss until everything is well coated.
Notes
To make dressing from scratch, combine
½ cup mayonnaise, 2 teaspoons granulated sugar, 1½ tablespoons white vinegar, and salt and pepper to taste.
If making the salad ahead of time, hold off on adding the bacon bits and cheese until you are ready to serve so they don't get soggy.
