2cupsice cream slightly softened
¼cupdecorations such as sprinklescookie crumbs, chopped nuts, or mini chocolate chips, as desired
Instructions
Shape cookie dough into 12 cookies. Bake according to package directions. Transfer to a cooling rack and allow to cool completely.
Pour your sprinkles, cookie crumbs, chopped nuts, or mini chocolate chips into a wide shallow bowl.
On a large baking sheet, lay out 6 cookies, bottom side up. Scoop ⅓ cup of ice cream onto each cookie. Top each sandwich with a second cookie, bottom side down, pressing together gently.
Roll the outer edge of the ice cream into the prepared decorations.
Place them in the freezer for at least 3 hours, or until ready to serve.
Notes
If not serving immediately, ice cream sandwiches can be wrapped individually in wax paper or plastic wrap, then stored in a resealable freezer bag for about a month.
