Super addicting and oh so buttery, homemade Butter Mints are a sweet sensation that make the perfect candy to have for all occasions.
- 1 cube butter cold cut into 1 inch pieces
- 4 cups powdered sugar sifted and divided + extra for rolling
- 2 Tbsp whole milk
- ½ tsp pure peppermint extract
- 1 tsp pure vanilla extract
- Food coloring optional
Line a baking sheet with a piece of parchment paper and set aside.
In a large bowl or in the bowl of your stand mixer sift 2 cups of powdered sugar and add in the butter. Mix on medium until combined, then add in the remaining two cups of sifted powdered sugar and mix until thoroughly combined.
Add in milk, vanilla, and peppermint extracts and mix until creamy.
Sprinkle a cutting board with additional powdered sugar (to prevent stickiness) and turn dough out. Cut into 4 equal pieces and if using food coloring add just a small drop to each. Turn dough out again until fully incorporated. (If using more than one color, repeat until all colors are incorporated into dough)
Using one piece at a time roll into 1/2 inch to an inch size log and cut with a knife or dough scraper into small pieces and place on prepared baking sheet. Repeat with all four pieces and allow to sit over night uncovered to dry.
