  • 3 tablespoons heavy whipping cream
  • ½ teaspoon salt
  • fresh black pepper
  • 1 tablespoons olive oil
  • ½ cup onion diced
  • 1 clove garlic minced
  • 5 ounces fresh spinach
  • 2 tablespoons sun dried tomatoes
  • 1 tablespoon Fresh Italian parsley

  • Preheat oven to 425 degrees F.
  • In a mixing bowl, mix together the eggs, cream, salt, pepper, and 1/2 of the cheese. Set aside.
  • Heat oil in a 10 inch skillet. Add the onion and cook over medium heat until tender and translucent. Add the garlic and sun dried tomatoes and cook another 30 seconds. Add the spinach and cook until wilted. Season with salt and pepper, to taste.
