Easy Taco Casserole

This Taco Casserole has beef, tomatoes, mexicorn, salsa and cheese that is baked until golden for an easy and delicious dinner!
- 1 cup long grain rice
- 2 cups broth low sodium or water
- 1 pounds lean beef diced
- 1 onion diced
- 1 clove garlic minced
- 1 packet low sodium taco seasoning
- 1 each red pepper green pepper diced
- 1 can mexicorn
- 1 can rotel tomatoes gently drained
- ½ cup salsa
- 1 cup light cheddar
Preheat oven to 350˚F.
Combine rice and water/broth. Cook covered 20 min.
Meanwhile, brown beef, onions and garlic. Add taco seasoning, water as directed on package and peppers. Cook until thickened. Combine all ingredients except cheese in a 9x13 pan.
Cover and cook 25 minutes. Uncover, top with cheese and cook an additional 20 minutes or until heated through.
