Ham and Potato Soup

A rich velvety soup loaded with ham, potatoes and broccoli.

Ingredients

  • 1 tablespoon olive oil
  • 2 stalks celery sliced
  • 1 medium onion chopped
  • 2 carrots sliced
  • 2 cloves garlic minced
  • 3 lbs potatoes peeled and cubed, approximately 4-5 medium
  • 6 cups chicken broth low sodium
  • 1 teaspoon poultry seasoning
  • 2 tablespoons parsley fresh
  • ¼ cup all-purpose flour
  • 2 cups cooked ham diced
  • 2 cups milk
  • 2 cups light cream
  • 4-5 cups broccoli chopped
  • 2 cups sharp cheddar cheese shredded
  • cup parmesan cheese shredded
  • pepper to taste

Instructions

  • Heat the oil in a large pot over medium heat. Add celery, onion, carrot, garlic and seasonings and cook until the onion is tender, about 5 minutes.
  • Add potatoes, chicken broth, broccoli stems and parsley. Simmer until potatoes are tender, about 15 minutes.
  • Combine milk, cream and flour in a small container. Whisk until flour is mixed in. Add milk mixture, broccoli and ham to the pot and simmer about 10 minutes, stirring occasionally until broccoli is tender.
  • Remove from heat and using a potato masher, mash mixture slightly to thicken. Stir in cheeses and pepper to taste.
