Peel and dice potatoes into 1" cubes. Place in a large pot with garlic and fill with water until potatoes are covered. Bring to a boil, and cook for 12-15 minutes or until fork tender.
Drain potatoes and garlic into a strainer, return to pot and let rest for 5 minutes.
Add butter and cream to potatoes and mash with a hand masher until smooth. Add additional cream as needed. Season with salt & pepper to taste.
