Instructions
Heat oil in a nonstick skillet over medium heat. Pan-fry tortillas one by one until golden and crisp on each side, adding additional oil to the pan if needed. Set tortillas on a paper towel to drain excess oil.
Place refried beans in a bowl and microwave until hot.
Set broiler to high heat. Line a baking sheet with foil and place 4 tortillas on the sheet.
Spread ½ cup of refried beans on each tortilla, then divide the ground beef between the 4 tortillas. Top each with another tortilla, and spread 2 tablespoons of enchilada sauce over each. Top each with ½ cup cheese.
Broil 4-6 inches from the heat for 2-3 minutes, or until the cheese is golden and bubbly. Top with tomatoes, black olives, and green onions.
Let rest for 3 minutes before cutting into quarters.
Notes
Create a zesty sauce with equal parts sour cream and your favorite salsa. Add a squeeze of lime juice and a pinch of salt to enhance the flavors. Drizzle the sauce generously over the assembled pizza before adding the top tortilla layer, or after it is cooked.
Refrigerate leftovers in a covered container for up to 3 days.
Reheat pizzas in the microwave and then place under broiler for 1 minute to crisp up. Or alternately use an air fryer to reheat.
