Preheat oven to 375°F. Grease an 8x8 inch casserole dish.
Place frozen carrots in casserole dish.
Combine mayonnaise, shredded cheese, and seasonings. Spread over top of carrots.
Crush up potato chips and sprinkle over top.
Bake for about 30 minutes, so cheese is melted and carrots are fully cooked.
Notes
Use thick chips so they stay crunchy. And cover with foil to avoid chips browning too much. Remove foil for the last 10 minutes of cook time.
If using fresh carrots, steam or boil them before adding to the casserole dish. Be sure to cut carrots to a uniform thickness so they bake evenly.

Add a little bit of softened cream cheese or sour cream to the sauce for extra creaminess!
Refrigerate leftovers covered in plastic wrap for up to 3 days. Freeze leftovers in portions for up to 8 weeks. Thaw frozen casserole in the refrigerator before reheating.
To reheat, add fresh chips to the top and bake until heated through.
